Just fail the mission. Seriously, just do something wild and mission-fail-worthy. GTA 5 is pretty forgiving with restarts.
Restarting a contract in GTA 5 is pretty easy, just like rage-quitting but with style! If you're in the middle of the contract and wanna start over, you can simply fail the mission intentionally (like blowing yourself up, classic GTA style) or quit the mission through the game's pause menu. When you restart, you'll be given the option to retry from the last checkpoint or start the contract over. Pick your poison and good luck!
