Short and sweet: You generally can't. Once a game updates on Steam, that's usually it, unless the devs themselves offer a way back.

Tried this once with a game that got a buggy update, went to the 'Betas' tab in the game's properties menu and found an option for a previous version. Not all games have this, but it's worth a shot!
