Head to Nam Cobanda Isle later in the game. There's a special theater where you can rewatch many of the skits and cutscenes you've encountered. It's like Vesperia's own home cinema!
Sorry, but you can't directly rewatch skits in Tales of Vesperia without save/load trickery or starting a new game.
I always save often in different slots! That way, I can load an old save if I wanna rewatch a specific scene or interaction.
