I find it easiest to rob the cargo train by using a helicopter. Fly above, drop onto a car, and you're in! Quick escape too.
Tbh, robbing the train isn't worth the hype. Just go for the bank or donut shop instead.
Personal tip: Make sure you have a car parked close by for a fast getaway. Timing is everything!
