Rolling in GTA 5 is pretty simple! While you're aiming (holding down L2), just tap the square button, and your character will perform a combat roll. It's a great move to dodge bullets during a shootout. Just make sure you've got enough space around you to pull it off!

Honestly, I don't get why people roll so much in GTA 5. Just find cover. Much safer.
