Head to Fortnite’s settings and enable Performance Mode under the Video settings tab. Also, make sure your Xbox is connected to a display that supports 120Hz refresh rate.

To run Fortnite at 120 FPS on your Xbox Series S, go to Settings -> Video -> toggle on Performance Mode. Just make sure you have a 120Hz capable monitor or TV!
