To run the 64-bit version of XCOM 2, just go into your Steam library, right-click on the game, select 'Properties', go to the 'Betas' tab, and choose 'War of the Chosen'. Make sure you have it installed too!

You just need to check if 'War of the Chosen' is installed and updated on Steam鈥攊t runs the 64-bit version by default.
Make sure your system is 64-bit, then update your game via Steam. It should automatically run the 64-bit version if all is up-to-date.
As long as you've got a 64-bit OS and the latest game update, XCOM 2 should automatically run in 64-bit mode. Easy peasy!
