To save and exit your game in Animal Crossing, just press '-' (the minus button) on your Nintendo Switch controller. This will bring up the 'Save and end' option. Select it, and voila – your game saves and you're all set to exit. Remember, Animal Crossing autosaves pretty frequently too, but it's always good to manually save before quitting.

Actually, I never bother manually saving. The game autosaves so often, I just close the game and everything's been fine so far. Still, better safe than sorry, especially if you've just caught a rare fish or something.
