I had the original Xbox 360, and the key is to regularly check your storage settings to ensure your saves go to the hard drive. Saved me from many lost progress nightmares!

Go to the System Settings, then Storage, and ensure the Hard Drive is selected as the save destination. Now, just play and save as usual!
