Auto-save is your friend. Make sure it's turned on in the settings. It'll save after missions, so you won't lose much progress if you forget to manually save.
In most GTA games, you can save your progress by simply going to your character's safe house and walking over the save icon, usually depicted by a floppy disk or bed icon. This will open the save menu, letting you choose a slot for your save file. Easy peasy!
