To save a mission in GTA San Andreas, you need to reach a checkpoint or complete the mission. After doing so, head over to your safe house and walk into the floppy disk icon to save your game. This won't save your exact mission progress but will save your overall game progress, including missions completed.

No fancy tricks here, just make sure you beat the mission and then save your game at a safe house. You can't save mid-mission, gotta reach those checkpoints or see it through to the end.

Just hustle through the mission, then head home and save. Old school style – no quicksaves or checkpoints mid-mission.
