Saving in GTA 5 Online is pretty straightforward! Your progress autosaves almost all the time after completing missions, activities, or after buying stuff. But if you want to make extra sure, you can force a save by changing your outfit from the Interaction Menu. This triggers the game to autosave your progress. Also, leaving GTA Online through the pause menu and selecting 'Leave GTA Online' ensures a proper save to the Rockstar Cloud.
