From my experience, go to your base supply locker, choose the weapon, and click on 'Salvage Weapon' to turn it into parts. Easy peasy!
You can't actually 'scrap' weapons in State of Decay 2, but you can 'salvage' them for parts at your base supply locker.
To scrap weapons in State of Decay 2, go to your base, open the supply locker, and choose the weapon you want to scrap. Then, select 'Salvage Weapon' to break it down into parts.
