Just check your bank statements or email receipts from Epic Games. They list all your V-Bucks purchases.
To see how many V-Bucks you've bought, log into Fortnite, go to the main menu and click on 'Profile,' then check the 'Purchase History' section. It shows all transactions!
You can't really check the total amount of V-Bucks you've bought directly in-game. Best to keep your receipts!
