I spent hours customizing my ship! You enter the ship customization menu, and from there, it's a smorgasbord of ship parts. Just make sure to save enough resources for your upgrades!
In Starfield, to select all ship parts, just head into the ship customization menu where you can choose various parts in the shipbuilder. Clicking through the categories, you can swap, add, or upgrade parts like engines, weapons, and hull components to your heart's content!
