From personal experience, make sure you're at a hub or your spaceship. Find your desired companion, chat with them, and select the option to join you. Done and done.

You can change your active companion by visiting a spaceport or any major settlement. Look for crew members hanging around, talk to them, and ask them to join your crew. Easy peasy!
