To skip the evolution animation, try force closing the app right after the evolution starts and then restart the app. It’s a quick trick to save some time!
I've found that disabling AR mode and using the 'Fast Catch' technique helps speed things up. Just hold the Poké Ball, drag it to the left while throwing a ball, and tap the screen to leave the Catch screen early.
