On the console versions, just hit the 'start' button during the cutscene. It should skip right ahead to the action!

You can't skip all cutscenes. Some are mandatory to keep the story flowing.

From my experience on PC, hitting 'Spacebar' or 'ESC' usually works to skip those cutscenes quickly.
