Hold the Xbox button on your controller, select 'Turn off console'. It enters sleep mode if Instant-on is enabled.

Settings > General > Power mode & startup > Choose 'Energy-saving' if you want it to fully shut down. 'Instant-on' for sleep mode.

Just press the Xbox button on the console for 10 seconds if you want a hard turn off. Not exactly sleep mode, but does the job!
