I always spend my coins on extra sun power-ups and shovels. The sun power-ups are lifesavers at the beginning of each level, and shovels let you fix your mistakes (like planting in the wrong spot) without a penalty. Best strategy IMO.
I always save my coins for upgrading my favorite plants. Makes a huge difference later in the game!
