Super easy! If you wanna split stacks in Terraria, just right-click on the stack in your inventory. This'll pick up half the stack. You can keep right-clicking to adjust the number you pick up. If you're looking to pick a specific amount, just right-click to grab a single item from the stack and then left-click to place them back individually until you've got the amount you want.
