Nice try but no cigar. GTA 5 doesn't have a feature to start any business, including a bike shop. You're better off focusing on the game's actual content like heists and missions to earn cash, then just customize bikes for fun.

Actually, you can't officially start a bike shop in GTA 5. The game doesn't have a business setup for that. But, you can act like you own one by customizing bikes at Los Santos Customs and using your garage as a makeshift showroom!
