Approach the ship and initiate combat if necessary. Clear the area and then access the ship from the cockpit to fly away.
Thieves can simply hack the ship's door using their tech skills and then fly away. Works every time!
Fly your own ship close to the one you want to steal, engage in space combat, then board and take control once you've disabled it.
