Steering in Tears of the Kingdom feels super intuitive once you get the hang of it! Basically, if you're gliding, just tilt the Joy-Con or the control stick in the direction you wanna go. First time I picked up Tears of the Kingdom, I struggled a bit with steering too. Felt like I was all thumbs. But seriously, it's about gentle movements. Make sure your controllers are calibrated correctly! Had an issue where my steering was off, turned out my Joy-Con was drifting. A quick recalibration in the Switch settings and it was like night and day. Also, experiment with both types of controls, handheld and using a Pro Controller. Different setups might suit your playstyle better!
