Easy peasy! Just open Steam, click on 'Library' and right-click the game you want to stop auto-updating. Select 'Properties,' then go to the 'Updates' tab. Here, you'll see a dropdown menu where you can choose 'Only update this game when I launch it.' Now you're in control!
