I've had this issue! What worked for me was plugging my headset directly into the DualSense controller and adjusting the 'sidetone volume' in the settings. This cut the echo significantly.
Just mute your mic when you're not speaking. Problem solved.
Honestly, use a good quality headset and make sure your room isn’t too echoey. Sometimes it's just the acoustics.
