I did this last month. Go into the PlayStation app, hit the profile icon, then 'Account Management', 'Subscription', and you should see the option to cancel. Took me all of 2 mins.

You can also do it through a mobile browser. Log into your account on the PlayStation website, go to 'Subscriptions Management', and cancel it there.
