Go to your PS4 settings, navigate to 'Account Management', then 'Account Information', and finally 'PlayStation Subscriptions'. Select your PS Plus subscription and disable auto-renewal. Easy peasy!

Just cancel it through the PlayStation Store. Go to your subscriptions, find PS Plus, and turn off auto-renew.
