To stop doing taxi work in GTA Online, you just need to exit the vehicle. Seriously, just get out of the taxi, and the mission should end. If you're looking for a less abrupt method, completing the taxi mission you're on usually wraps it up nicely too. Another way is to start a different job or mission, which will automatically end your current taxi work.

As someone who's spent too much time as a virtual cab driver, I've found that switching to a different activity, like starting a new mission or joining a different job, is the smoothest way to get out of the taxi grind.

Honestly, why stop? Taxi missions are easy cash. But if you really wanna quit, just exit the taxi. Simple as that.
