You can't stop the updates without losing access to new features and fixes. Keep your game updated!

Check your platform settings for auto updates. Disable that feature and War Thunder won't update until you do it manually.

I just uninstalled and reinstalled the game manually if I'm worried about updates messing something up. A bit extreme but it works.
