Subduing the Graphorn in Hogwarts Legacy is pretty epic! First, you gotta weaken it in combat using your spells. Keep moving to dodge its attacks. Once it's sufficiently weakened, approach it and you'll get a prompt to subdue it. Press the shown button, and voila, you've got yourself a Graphorn. Just remember, it's a battle of endurance, so keep your health up and keep casting!

Quick tip: Levioso works wonders! Get the Graphorn floating, then hit it with your strongest spells. When it's down on health, rush in to subdue. Easy peasy!
