From my experience, just holding the reload button (R/Square/X) lets you change ammo types mid-fight. Essential for those tougher enemies!
You gotta hold the reload button to get to the ammo select menu. It's R on PC, Square on PS4/PS5, and X on Xbox. Easy peasy!
