To switch positions in MLB The Show 24, head to the Player Edit screen in Franchise or during Road to the Show. There, you can make position changes, but remember to balance your player's attributes!

When you're in Franchise mode, go to the Player Edit screen and just change the position. Easy peasy, lemon squeezy.
