Just find a new piece of armor, select it in your inventory, and the old one will be automatically unequipped. Easy peasy!

The game system doesn’t have an option to remove armor directly. You gotta swap it out with another piece.

You can't really "take off" armor in Undertale. You just equip a new piece of armor from your inventory to replace the old one.
