Honestly, just blast them to bits and salvage what you can. Why bother with the extra steps?
I've done this a few times! Focus fire on the engines until they're disabled, then board the ship by docking. You can use your combat skills to take over the enemy ship and then follow the game's prompts to claim it.
You'll need to invest in some ship skills first. Target, disable, board, and then clear the hostiles. Boom! Ship's yours!
