The Xbox 360 doesn't support transferring music files directly to the console. You can only stream from your USB while you play games.
I've done this! Plug in your USB, go to My Xbox, then Music Library, and select Portable Device. You can't copy, but you can play it right from the USB.
Just stick with streaming from your USB. It's simple and works every time. No need to overcomplicate things.
