Transferring your Pokémon GO account to a new email is impossible. You gotta stick with the one you started with, unfortunately.

You can't change the email directly in Pokémon GO. Instead, you should link your account to a Google, Facebook, or Pokémon Trainer Club account that uses the new email address.

Had the same issue! I linked my account to Google, changed my Google email, then logged into Pokémon GO with the new Google email. Worked like a charm!
