You need to be moving forward, then jump three times in quick succession, with the third jump being the highest! It's easier than it sounds once you get the hang of it.
To triple jump in Super Mario 64, just run forward and press the jump button three times quickly. Make sure Mario lands after the first two jumps before pressing jump again for the third one!
