Just got my PS5 and had the same question. Go to Settings > Saved Data and Game/App Settings > Game Presets, and select Performance Mode.

First, ensure your TV or monitor supports 120Hz. Then, navigate to Settings -> Screen and Video -> Video Output, and set Enable 120Hz Output to Automatic!

Honestly, not all games support 120 FPS. Make sure to check the game's official specs or settings. A fast TV is useless otherwise.
