I always just press and hold the PS button until it powers down. Works like a charm every time!

You can just let it sit idle for a while, it turns off on its own eventually. But who has the patience for that?

Go to the 'Settings' menu on your PS3, then select 'Accessory Settings,' and finally 'Turn Off Controller.' Voila!
