Just pop open the console and use the command 'violence_ablood 0; violence_agibs 0; violence_hgibs 0; violence_hblood 0'. That should do the trick!

You can disable blood and gore by going to Options > Multiplayer > Advanced and checking the box for 'Disable gore'.
