Disable it directly through individual game settings. Most games with cross-play options have this feature in their settings menu.

To disable cross play on your PS5, go to Settings > Saved Data and Game/App Settings > Game Presets. Here you'll find the option to turn off cross-platform play.

You can't turn off cross play for all games from the system settings. It's managed through each game's settings individually.
