Go to the game's main menu, then select Settings > Gameplay > General Difficulty and switch from Dynamic to a fixed level like Rookie, Veteran, or All-Star. Easy peasy!

Just hit up the Options menu, navigate to Gameplay Settings, and change Dynamic Difficulty to any fixed setting you prefer. Problem solved!

You need to go into Settings from the main menu, pick Gameplay, and then scroll to General Difficulty. Change it from Dynamic to a fixed level like Rookie or Hall of Fame. Simple fix.
