To turn off gameplay recording on your PS5, go to Settings > Captures and Broadcasts > Auto-Captures and then set the desired options to 'Off'.

From personal experience, go into Settings, tap Captures and Broadcasts, and turn off Auto-Captures. I've done it, works like a charm!
