Unfortunately, you can't completely turn off the gore in Mortal Kombat 11, but you can tone it down significantly through the Gameplay settings.

Trust me, I've been there! Go to Options > Gameplay, and adjust the Violence Level setting. It's not a perfect solution, but it helps.
