HDCP can't be turned off on Xbox Series X. It’s on all the time. Sorry!

As an Xbox aficionado, I can tell you I struggled with this too. Just head to Settings -> General -> TV & Display Options -> Video Modes and uncheck 'Allow HDCP'.
