Go to your profile, find the highlight you wanna remove, click the three dots, and choose 'Remove from Highlights.' Done!
You can't "turn off" highlights as they're created manually, but you can remove them individually. Click the three dots on a highlight and select 'Remove from Highlights'.
I think removing each highlight is the only way. Just go to the highlight, hit the three dots, and choose 'Remove from Highlights.'
