Short answer, you can't turn it off completely, but you can take the batteries out to make sure it doesn't light up!

You can dim the Xbox button light by changing the console to 'Energy-saving' mode. Go to Settings > General > Power mode & startup > Power mode > Energy-saving. This won't turn it off completely but should help!

Unfortunately, as of now, there's no official way to turn off or dim the light on the Xbox Series X controller. If it's a real bother, you could try some DIY solutions like electrical tape, but that's not exactly elegant.
