You can mute your mic by pressing the Xbox button on your controller, scrolling to the right to 'Audio,' then adjusting the mic settings there.

Go to the settings menu, navigate to 'Devices & accessories,' select your controller, and mute the microphone. Easy peasy!

From firsthand experience, you can also turn off the mic by using the 'Party Chat' settings. Go to the 'Guide,' then 'Parties & chats,' and turn off the mic there. Works like a charm!
