You need to log into your PlayStation account, navigate to [Settings], then [Account Management], select [Account Information], then [PlayStation Subscriptions], and finally choose [Turn Off Auto-Renew] for PS Plus.

Go to Settings > Account Management > Account Information > PlayStation Subscriptions > PlayStation Plus. Then, select 'Turn Off Auto-Renew'. Easy peasy!

I had to turn it off recently, and all I did was go to the 'Account Management' section, then 'Account Information', followed by 'PlayStation Subscriptions', and found the option to 'Turn Off Auto-Renew'. Pretty straightforward.
